Everything you need to know
We believe in transparency and quality, so you know exactly where your food comes from. Here are answers to the most common questions about our farm, products and ordering.
What's the difference between live weight and hang weight, and how do you charge?
Live weight is the full weight of the animal before processing. Hang weight (or carcass weight) is the weight after the animal is dressed but before final butchering. Hang weight is typically 60 to 65% of live weight.
We charge by hang weight because it gives a more accurate price for what you are actually getting. Part of the live weight is unusable (organs, hide and bones), so hang weight better reflects the final product in your freezer.
How much freezer space do I need for a quarter, half or whole beef?
As a general rule of thumb, you will need:
- Quarter beef: 4 to 5 cubic feet (about a small chest freezer)
- Half beef: 8 to 10 cubic feet
- Whole beef: 16 to 20 cubic feet
A good reference: 1 cubic foot of freezer space holds about 30 to 35 lbs of beef.
Can I customize my cuts when ordering a quarter, half or whole beef?
Yes! When you order bulk beef, you fill out a cut sheet to choose how your beef is processed. That includes steak thickness, roast sizes, ground beef packaging and specialty cuts like brisket or short ribs.
If you are unsure about your selections, we are happy to guide you through it so you get the best mix for your needs.
How long does your beef dry-age, and why does it matter?
Our beef is dry-aged for a minimum of 14 days. Dry-aging lets natural enzymes break down muscle fibers, which makes a more tender, flavorful cut than grocery store beef, which is often wet-aged for a shorter time.
Do I have to pay for my order upfront, and how does pricing work?
For weight-based products, your card is authorized at checkout for the maximum estimated price, but you are only charged for the final weight at pickup.
For bulk beef orders, we take a deposit to secure your processing date. The remaining balance is due at pickup, based on the actual hang weight.
Where do the other products in your store come from?
Almost everything sold in our store is sourced within 32 miles of our farm from trusted local farmers and producers. Butter and cheese are the exceptions; we bring those in from trusted makers a little farther away. We choose partners who share our commitment to quality, ethical farming and sustainable practices, so you get the freshest, best-tasting products possible.
